A Coywolf! A what? A Coywolf! Yep, you guessed it; a hybrid resulting from the crossing of a coyote and a wolf, just like our beer which is a hybrid between the Bretts and the IPA. Not widespread, but still, it exists. With a 12-month ageing process in oak barrels with Brettanomyces Claussenii yeast, our Coyloup (French for Coywolf) reveals a pleasant fruity, tropical and slightly wild taste that blends perfectly with the raw hops (dry hop) of Mosaic added at the very end of the maturation cycle. A beer truly out of the ordinary, like this extraordinary animal!
